What Scientists Eat: Strawberry Avocado Salsa

Scientists are smart. So smart that sometimes they tell you something and you think to yourself, “No freakin’ way.” Which is exactly what I thought to myself when astronomer, Dr Nicole Gugliucci said that mixing together strawberries and avocados with peppers and onions would be a good idea.

But HOOOOO BOY was I wrong. Because this salsa was amazingly delicious! Not only is it super-tasty, it’s easy to make and it’s light and fresh tasting and absolutely perfect for summer.

From Dr Gugliucci:

I like to make simple things… and I like avocado. When I first made this with my friend Nikkie, I was scandalized by the thought of mixing the ever perfect avocado with another primary ingredient, but this was pretty delicious. It’s a sweet salsa, but we made wraps out of it with a bit of goat cheese. I don’t remember where the recipe first came from, though it was definitely a food magazine clipping that she had.

And now, I totally want some. 🙂
Here is the recipe:

Strawberry Avocado Salsa
Ingredients:

1 cup finely chopped strawberries

1⁄4 cup finely chopped peeled avocado

2 tablespoon finely chopped red onion

2 tablespoon chopped fresh cilantro

1⁄2 teaspoon grated lime rind

2 tablespoon fresh lime juice

2 teaspoon finely chopped seeded jalapeño pepper

1⁄4 teaspoon sugar

goat cheese (optional for wraps)

tortilla wraps (optional)

Preparation:

1. Combine all ingredients in a medium bowl; toss gently.
Serve immediately.

2. Serve this sweet and savory salsa with roast chicken, sautéed fish, or grilled pork tenderloin. You can also enjoy it as a snack with baked tortilla chips.

3. Mix with a bit of goat cheese for filling for wraps.
